A culinary trip to Africa is on the menu for guests at Florida Tech’s Panther Dining Hall on Thursday, as part of the university's International Dinner Series.
The series features authentic dishes from around the world and culminates with a Mother’s Day brunch on May 10, 2020.
Launched in 2014 by the university’s Campus Dining Services director Tom Stewart and chef de cuisine Jon Skoviera, the series features buffet-style dinners. Each dish is approved by Florida Tech students and staff from the country or region featured that month.
The African dinner will be 5:30-8:30 p.m. Thursday at Panther Dining Hall. Cost is $16.50.
Panther Dining Hall, 3113 Panther Place, is just south of the Clemente Center on the Florida Tech campus in Melbourne. Visitor parking is free on the first floor of the parking garage behind the dining hall.
The menu features:Nigerian-style salad. Salad with lettuce, carrots, potatoes, baked beans, corn and cucumberJollof Rice. One of the most common dishes in Africa rice, chicken, tomato, onion, ginger and cuminDoro Wat. From Ethiopia, spicy chicken marinated in fenugreek, cardamom and nutmegGoat Tagine. Tender goat simmered with Moroccan spices, apricots and dates Tilapia with Onion and Tomato. Seasoned tilapia with grilled onion, tomato and African pepper sauceKenyan Irio. Mashed potatoes, corn, peas and greensNigerian Plantain and Bean Porridge. Black eyed peas, plantains, sweet potatoes and red palm oilFried PlantainsWhite RiceBaklavaSouth African Malva Pudding. In addition to the foods, there will be related educational materials posted in the dining hall and, at some meals, entertainment from the country or region that developed the cuisine.
